Comments
1.) Got a few handfuls of fresh basil from the garden.
2.) Toasted a good 1/4 c. or so of pine nuts in a dry skillet. (Doesn't take long.)
3.) Grated a good 1/2 c. or so of Parmesan with the microplane.
4.) Minced a clove of garlic.
5.) Got out my good extra virgin olive oil, my good Kosher salt, and my pepper grinder.
Then. I put the basil, garlic, pine nuts and cheese in the food processor and started to pulse. I added a little oil here and there, just enough for the mixture to become a paste. (Not too much!) I tasted along the way, adding a little more cheese or basil, salt or pepper as I wanted it. Voila! We served it over orzo, and it was delish!
